Cauliflower and Caramelized Onion Quiche

If you already had enough of the classic Quiche Lorraine and onion, ham and cheese filling, this vegetable version of the beloved French savory pie will be a real refreshment

Ingredients:
  • PASTRY:
  • 150 g flour
  • 1,5 spoon cornstarch
  • 1/4 teaspoon salt
  • 6 spoons of Butter, diced
  • 1 egg
  • _____
  • FILLING:
  • 1 small cauliflower (or romanesco), cut in buds
  • 3,5 spoons olive oil
  • 1 big onion, cut in thin slices
  • 1 spoon Dijon mustard
  • 2 bigger eggs
  • 200 g mascarpone cheese
  • 1 dl cooking cream
  • 100 g grated cheese (gruyer or emmentaler)
  • 2 spoons grated parmesan
  • Black pepper
  • Salt
  • Nutmeg
Preparation:

PASTRY

  1. Mix the flour, cornstarch and salt in a bigger bowl.
  2. Add die butter dices and mix it manually into the dry ingredients.
  3. Add the egg and mix until all the ingredients connect and form a dough.
  4. All of this can be done with the kitchen robot - it will be faster.
  5. Roll out the dough on a surface with flour and put it in a 25 cm form. Press the edges and put it in the fridge for 30 minutes.

FILLING

  1. Warm up the over do 200 degrees.
  2. Sprinkle the cut cauliflower buds with oil and mix it well. Spread it out on a baking tray with baking paper, add salt and pepper and bake it for around 20 minutes.
  3. Leave the baked cauliflower to cool down and cut it into smaller pieces.
  4. Warm up the rest of the olive oil in a pan and add the cut onions, add salt and pepper and caramelize It for about 20 minutes, occasionally stirring. Leave it to cool down.
  5. Turn the oven down to 180 degrees.
  6. Take the prepared dough out of the fridge, poke it with a fork and put it in the oven to bake empty for around 10 minutes.
  7. Take out the dough and let it cool down a bit. Then evenly spread mustard on it and spread the caramelized onions and cauliflower on in.
  8. Whisk the eggs, add mascarpone and cooking cream, salt and nutmeg and mix it well together. Gently add the grated cheese. Pour everything over the cauliflower and sprinkle with grated parmesan.
  9. Bake it until the quiche gets a nice color, around 40 minutes.
  10. Serve it lukewarm with a leafy green salad.
