Peach Pie

Ingredients:
- CRUST:
- 350 g of flour
- 200 g of cold butter, diced
- 80 g of sugar
- pinch of salt
- 2 table spoons of sour cream
- 1-2 table spoons of cold water

- FILLING:
- 1,5 kg of peaches - nectarines, yellow peaches, white peaches...
- 1 small cup of sugar
- vanilla sugar
- juice of 1 lime
- 2 table spoons of starch
- 1 table spoon of brown sugar for sprinkling
Preparation:
- Combine the flour, sugar, and salt in a kitchen robot bowl.
- Add the cream and cold butter. Mix it until the mixture gets crumbly. Add the cold water, keep mixing, and then continue kneading it by hand and form it into a ball.
- Wrap the dough in plastic wrap and leave it in the fridge for half an hour.
- Meanwhile, peel and clean the peaches, dice them, or cut them into slices. Add the sugar, vanilla sugar, and lime juice. Mix it well and add the starch. Mix it gently and leave it aside.
- Heat the oven to 180 °C.
- Divide the dough into 3 parts, take 2/3 of it, roll it out into a circle, and put it in a pie form.
- Spread the prepared peaches onto the dough and smooth the surface.
- From the rest of the dough cut cca 1 cm wide strips and create a lattice.
- Sprinkle the pie with brown sugar and put small pieces of butter all over it.
- Bake the pie at 180 degrees for about one hour and 15 minutes, until it gets a nice color.
- Cool it down and serve it as it is or add a spoon of vanilla ice cream.
Catch the last peaches of the season and spoil yourself with this fantastic, juicy and aromatic pie. The simplicity of preparation and ingredients are inversely proportional to the final result. And if you replace the butter with margarine and the sour cream with vegetable yogurt, you'll have a vegan version in no time!
