Summer salad with couscous, avocado and feta cheese
- 200 g of soaked and cold couscous
- 2 ripe diced avocados
- 7-8 dried tomatoes or fresh tomatoes from which you removed the seeds and excess water
- 150 g feta cheese (or salty sheep or goat cheese)
- lemon zest, organic
- fresh basil leaves
- salt
- pepper
- a few spoons olive oil
- vinegar (kalamondin)
- Prepare the couscous first. Boil water in a pot with salt and two spoons of olive oil. Gradually pour the boiling water over the dry couscous and mix it to loosen up. When it gets soft and you separate all the grains, leave it aside to cool down.
- Cut the dried tomatoes into smaller pieces. If you are using fresh tomatoes, wash them, cut them in half and remove the seeds and excess water. Dice them. The best choice are cherry tomatoes.
- Wash and dry the lemon and grind the zest.
- Dice the feta cheese, peel the avocado, and dice it too.
- Put the cold couscous into a bigger serving bowl and slowly add the other ingredients. Combine it all together and spice up with olive oil and flavored vinegar.
- Add the basil leaves at the very end, to prevent them from turning dark.
- The salad can be cooled down or served immediately.
After a few dry and sunny days, with the temperature over 25 degrees, we can finally happily say that the Summer is here! And therefore also the will to eat light, healthy, but also nutritious food.
